Do you sometimes struggle with what healthy snack to put on the table tonight? Do you want to fill a charcuterie board with delicious treats, but it also has to be healthy? Then these spinach egg rolls are the healthy snack you're looking for!
Eggs are incredibly good for the brain because they are packed with choline and other vitamins and minerals such as B6, B9, B12, iodine, potassium, sodium, and more!
Preferably buy your eggs directly from the farmer to prevent animal suffering.
Ingredients for 1 roll:
- 2 eggs
- 50 g fresh spinach, torn into small pieces
- 50 ml unsweetened almond milk
- 2 tbsp fresh thyme
- 30 g grated goat cheese
- 1 tbsp sun-dried tomatoes julienned
- 1 tbsp roasted pine nuts
- ½ tbsp coconut oil
- Salt and pepper

How to make this healthy snack?
- Whisk the eggs with the almond milk, spinach, thyme, and some salt and pepper;
- Heat the coconut oil in a small frying pan and pour the egg mixture evenly into it;
- Cook the omelet over low heat with a lid on the pan and carefully flip it after about 5 minutes;
- Place the omelet on a cutting board and sprinkle with grated cheese. Let the omelet cool down a little, then top with the sun-dried tomatoes and roasted pine nuts;
- Carefully roll up the omelet and cut it into small rolls.
Tip: To be able to roll the omelet, it must be as thin as possible, but this is not always easy when flipping it in the pan. By sliding the omelet onto a large lid and then 'tipping' it back into the pan upside down, the omelet will remain intact!
