What do you need for this healthy snack?
For approximately 12 bars:

10 Medjool dates, pitted

6 tablespoons tahini

6 tablespoons almond butter
-
9 tablespoons (gluten-free) oatmeal

4 tablespoons hemp seeds
-
2 tablespoons sesame seeds
-
Zest of 1 lemon
-
Pinch of salt
-
100g dark chocolate (at least 70%)

1 tablespoon coconut oil
-
1 teaspoon vanilla extract
How to make this healthy snack?

Pit the dates and soak them in warm water for 10 minutes;

Place the dates with the tahini, almond butter, oatmeal, hemp seeds, sesame seeds, lemon zest, and a pinch of salt in a food processor and blend until a dough-like consistency;

Spread the dough into the bar molds of a silicone baking pan and press down firmly (it is also possible to use a greased loaf pan and later cut the whole into bars);

Place the baking pan in the refrigerator for 20 minutes;

Meanwhile, melt the chocolate au bain-marie, along with the coconut oil and vanilla extract;

Then pour the melted chocolate evenly over the bars and sprinkle with some extra sesame and hemp seeds;

Place the baking pan in the freezer, and after 60 minutes, your brain food bars are ready!
