Healthy cakes with chocolate and avocado

For many, December is all about drinks, dinners, conviviality, and more dinners. It's a time for indulgence, but it often also brings with it those inevitable energy dips and unwanted extra pounds. Healthy indulgence is the solution, and these healthy tarts with chocolate and avocado are perfect for that!

What do you need for 5 healthy tarts?

  • 150g spelt flour
  • 2 tbsp coconut oil, melted
  • 1 tsp baking powder
  • 4 tbsp honey
  • 20g cocoa powder or Cacao Mix
  • 200g dark chocolate, preferably sugar-free
  • 2 avocados
  • 1 vanilla bean
  • 6 tbsp almond milk, unsweetened
  • 5 Medjool dates
  • 2 tbsp seeds, kernels, or puffed grains (e.g., pumpkin seeds, hemp seeds, or puffed quinoa)
  • 5 mini quiche molds with loose bottoms (10 cm)

How to make these delicious healthy tarts?

  1. Preheat the oven to 180 degrees Celsius;
  2. Mix the spelt flour with the baking powder, 1 tbsp melted coconut oil, honey, and cocoa powder, then knead by hand into a cohesive mixture (it might remain slightly crumbly, but should stick together);
  3. Use the other tbsp of coconut oil to grease the baking molds and spread the 'dough' over the molds (press down firmly!);
  4. Bake the bases for approx. 15 minutes in the preheated oven and let cool completely;
  5. Melt the chocolate using a bain-marie, then blend it with the avocados, dates, the pulp from the vanilla bean, and the almond milk in a blender until it forms a mousse;
  6. Spread the mousse over the cooled tart bases and sprinkle with seeds and kernels of your choice!
