Matcha powder is made from very young, organically grown tea leaves and is packed with antioxidants! Many people use matcha for tea or a latte, but you can also use the powder for baking, in oatmeal, or with quark!

Ingredients for matcha waffles:
- 165 gr oat flour
- 300 ml plant-based milk, unsweetened
- 2 eggs
- 2 tsp baking powder
- 2 pinches matcha powder
- 75 gr feta
- 1 avocado
- 100 gr (lactose-free) quark
- 1 tsp hemp seeds
- 1 tsp chia seeds
- 2 tbsp coconut oil
- salt
Preparation method for matcha waffles
- Whisk the eggs with the plant-based milk and mix the oat flour with the baking powder, 1 pinch of matcha powder, and a pinch of salt;
- Now mix the wet ingredients with the dry ingredients until a smooth batter forms;
- Heat the waffle iron and grease it with some coconut oil;
- Spoon the batter into the waffle iron and check after a few minutes if the waffles are cooked through;
- Mix the quark with the other pinch of matcha powder and slice the avocado thinly;
- Serve the waffles with the matcha quark, avocado, crumbled feta, and some seeds like hemp and chia seeds!
